So we've "cooked up" a surprise for you & asked some of our colleagues for their culinary favourites of the autumn - there's even some family secrets in there! 👪

Camille's divine onion soup:

Mince 5-6 yellow onions & sauté in butter or oil for ten minutes or until translucent. Add a tablespoon of flour, if necessary;

Add 4 liters of liquid, 3 of beef or chicken broth and 1 of beer (beer can be replaced by white or red wine, depending on the broth chosen);

Season with salt, pepper, thyme & Worcestershire sauce;

Cover and cook over fairly high heat for 10 to 15 minutes.

Place in ovenproof soup bowls, add bread croutons, gratin cheese and bake until cheese is golden.

Marc's exquisite autumn soup:

Place butternut squash, Nantes carrots, onions & garlic randomly on a baking sheet;

Season with salt & pepper, and drizzle generously with vegetable oil (and a little garlic oil - the secret ingredient);

Sprinkle with garlic powder & onion powder and roast in a 375-degree oven for 45 minutes, or until vegetables are cooked through;

Remove skins and place vegetables in blender with chicken broth for a creamy texture;

Sabrina's sublime vanilla sponge cake:

Separate the egg whites from the yolks & whip the egg whites as long as possible (the key is time, she says!). );

Add 30g sugar/egg to create a smooth & firm meringue;

Pre-whisk the yolks with a tablespoon of vanilla in small batches & gently fold flour into the mixture;

Whisk for a short time & finish with a spatula to avoid dropping the whites;

Preheat the oven to 325 degrees Celsius & grease the tin, taking care to put a little flour in too;

Bake for 15 to 20 minutes.
