There are refreshing drinks, citrus-flavored cocktails & tasty low-fat dishes to counter Mother Nature's 30-something degrees this season, but why not dare to copy the trend when it comes to desserts?

If we start from the basics, fruit remains a must-have to bring a naturally sweet edge to cakes & other sublime delights. All that's left is to put your creativity to work to surprise your palate and, of course, eat with your eyes first.

So here's a selection of fun, dapper and, above all, utterly delicious ideas for eating a more balanced diet, without getting too boring.

Frushis

Yes, we love them as a main meal - but fruit sushi is gaining in popularity. After all, they're low in calories & look great on a sharing platter!

Simply spread the sushi rice on the sushi mat & spread with coconut cream (or the cream of your choice, depending on your taste). Place 2-3 types of fruit on top: strawberries, pineapple, kiwi, mango, cantaloupe & roll up tightly. Cut into fairly thick slices and top with grated coconut, coulis or whipped cream if you're feeling greedy!

You can also use a doughnut mould for larger portions.

Healthy Fruit Rolls

Nop, we're not talking about those sugar-laden scrubby things you get at the grocery store, but rather a spring roll reinvented & bursting with freshness! All you have to do is replace the shrimp-avocado version with your favorite fruit, and you've got a culinary experience that's effective, but oh-so-beautiful to serve!

Fruit cubes + jelly

There's a tendency to make things complicated when simplicity is just around the corner. Opt for symmetry and ease by creating fruity ruby cubes, topped with herbs or cheeses to balance out the flavours. What's more, this alternative can also be served as an appetizer, so prepare large quantities!

You've probably already had a “jello shot”, but have you ever thought of offering them in small bites after a busy meal?

Collect the peelings of lemons, oranges or limes themselves & fill with a commercial jello preparation, to which you've added a few berries that take your fancy (blueberries, blackberries or raspberries). Leave to rest in the fridge for 1 to 2 hours, and you've got yourself a quick and easy dessert!

With all these great suggestions, all that's left to do is to wish you many wonderful get-togethers with friends & a summer rich in the pleasures of the table!
